  • 1 pound ground beef
  • 1 cup finely chopped yellow onion
  • 3 cloves garlic (minced)
  • 1 bell pepper (chopped)
  • 1 ¾ cups low-sodium chicken broth
  • 1 tablespoon Italian seasoning
  • 2 cups elbow macaroni (uncooked)
  • 30 ounces canned diced tomatoes
  • 15 ounces canned tomato sauce
  • 1 ½ cups shredded cheddar cheese

Instructions

  1. Select the sauté function on your Instant Pot. Once hot, add ground beef and brown while breaking it apart. Drain excess grease if necessary.
  2. Add chopped onion and cook for about two minutes until softened. Stir in minced garlic and chopped bell pepper for one minute before canceling the sauté function.
  3. Pour in chicken broth, scraping any bits from the bottom. Mix in Italian seasoning.
  4. Layer uncooked elbow macaroni on top without stirring, then pour diced tomatoes and tomato sauce over the pasta.
  5. Close the lid, set the steam release valve to sealing, and cook at high pressure for four minutes.
  6. Perform a quick release by moving the steam valve to venting once cooking ends. Stir gently to combine after opening.
  7. Mix in shredded cheddar cheese until melted and serve warm.
