  • 2 cloves garlic (minced)
  • 2 tablespoons all-purpose flour
  • ½ cup dry white grape juice
  • 6 cups low sodium beef broth
  • Salt and pepper to taste
  • Fresh thyme
  • Bay leaves
  • 8 slices baguette
  • 2 ounces Gruyere cheese (shredded)

Instructions

  1. Slice onions into ¼-inch thick pieces.
  2. In a Dutch oven, heat butter and olive oil over medium heat. Add onions and sauté until soft and caramelized, about 25–30 minutes.
  3. Stir in minced garlic and flour; cook for an additional minute.
  4. Deglaze with dry white grape juice, scraping up browned bits from the bottom.
  5. Add beef broth, salt, pepper, thyme sprigs, and bay leaves; bring to a simmer.
  6. Simmer uncovered on low heat for about 30 minutes.
  7. Toast baguette slices in the oven at 400°F for 5–6 minutes until golden brown.
  8. Taste the soup and adjust seasonings as necessary; remove thyme stems and bay leaves.
  9. Preheat broiler to 425°F; fill oven-safe bowls with soup and top with toasted baguettes and shredded cheese.
  10. Broil for 2–4 minutes until cheese is melted and bubbly; serve hot.
