  • ⅓ cup low sodium soy sauce
  • ⅓ cup ketchup
  • ¼ cup honey
  • 2 teaspoons sesame oil
  • 3 cloves garlic (minced)
  • ¼ teaspoon black pepper
  • Pinch of red pepper flakes (optional)
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Cooked rice, sesame seeds, and chopped green onions (for serving)

Instructions

  1. Place the chicken in the slow cooker.
  2. In a medium bowl, whisk together soy sauce, ketchup, honey, sesame oil, garlic, black pepper, and optional red pepper flakes. Pour over the chicken.
  3. Cover and cook on low for 3-4 hours or high for 1½-2½ hours until cooked through.
  4. Remove chicken to shred; mix cornstarch with water and stir into the sauce in the slow cooker. Cook on high for an additional 10-20 minutes until thickened.
  5. Return shredded chicken to the sauce; stir to combine.
  6. Serve over rice topped with sesame seeds and green onions.
