  • 2 teaspoons olive oil
  • ½ cup chopped red onion
  • ½ cup chopped bell pepper
  • 4 large eggs
  • Salt (to taste)
  • 1 tablespoon butter
  • 4 whole wheat English muffins
  • 4 slices sharp cheddar cheese
  • 4 slices cooked turkey turkey bacon
  • ¾ cup guacamole

Instructions

  1. Heat olive oil in a nonstick skillet over medium heat. Add chopped onion and bell pepper; cook until softened (about 3 minutes). Transfer veggies to a bowl and set aside.
  2. In a mixing bowl, crack the eggs and add salt. Whisk until combined. Melt butter in the skillet over medium-low heat, then pour in the eggs and scatter the cooked veggies on top. Cook until edges set (about 1 minute), lifting edges periodically.
  3. Once mostly set, cover with a lid if desired, fold into thirds, and cut into four pieces.
  4. Toast English muffins until golden brown, placing cheese on each half followed by a piece of omelet, half a slice of turkey turkey bacon, and guacamole.
