Ingredients

Scale
  • 3 tablespoons unsalted butter
  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 2 cups buttermilk
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries

Instructions

  1. Melt the unsalted butter in a small saucepan over low heat; set aside to cool.
  2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a large bowl, combine eggs, buttermilk, and vanilla extract. Add melted butter and mix well.
  4. Gradually incorporate dry ingredients into wet ingredients until just combined (lumps are okay).
  5. Gently fold in fresh blueberries.
  6. Preheat an electric griddle or non-stick skillet over medium heat and lightly grease it.
  7. Pour about ¼ cup of batter for each pancake onto the griddle. Cook until bubbles form on the surface (about 3 minutes), then flip and cook until golden brown (about another 2-3 minutes).
