  • 1 pound large shrimp (peeled and deveined)
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 2 tablespoons sesame oil
  • 1 small chopped white onion
  • 1 cup frozen peas and carrots (thawed)
  • 3 beaten eggs
  • 3 cups cooked rice (preferably cold)
  • 3 tablespoons soy sauce (adjust to taste)
  • 2 tablespoons chopped green onions

Instructions

  1. Heat a large skillet or wok over medium heat. Add vegetable oil and shrimp; season with salt and pepper. Cook for 3-5 minutes until shrimp are opaque. Remove from skillet.
  2. In the same skillet, sauté the onion and thawed peas and carrots for about 3-5 minutes until tender.
  3. Push veggies to one side; scramble eggs on the other side until fully cooked, then mix into veggies.
  4. Increase heat to medium-high, add cooked rice and shrimp back in, along with soy sauce and sesame oil. Stir well until heated through and combined evenly; adjust seasoning if necessary.
  5. Garnish with chopped green onions before serving.
