  • 75g sushi rice
  • 3 tbsp rice grape juice vinegar (plus extra for brushing)
  • 1 tbsp sugar
  • Salt (Big pinch!)
  • 1 tbsp hot water
  • 75g tinned tuna
  • 1 tbsp mayonnaise
  • 1 egg (whisked)
  • 1 ripe avocado
  • Salt
  • Pepper
  • 2 nori sheets
  • Sriracha mayo

Instructions

  1. Cook the sushi rice by rinsing it until the water runs clear, then combine it with an equal volume of water in a saucepan. Bring to boil, reduce heat, cover, and simmer for 10 minutes. Let sit covered for another 5 minutes.
  2. In a bowl, mix tinned tuna with mayonnaise, salt, and pepper.
  3. Whisk an egg in a separate bowl. Cook the egg in a non-stick pan over medium heat to make an omelette; season as desired.
  4. Slice avocado and set aside.
  5. Season the cooled sushi rice with a mixture of rice grape juice vinegar, sugar, salt, and hot water.
  6. Assemble Onigirazu by placing fillings on nori sheets: start with sushi rice, then layer avocado slices, omelette pieces, tuna mayo mixture, more avocado slices, and finish with another layer of sushi rice.
  7. Wrap the nori around the fillings tightly and serve with sriracha mayo.
