  • 16 ounces uncooked elbow pasta (white or whole wheat)
  • 4 cups water
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon paprika
  • ⅛ teaspoon garlic powder
  • 2 tablespoons unsalted butter
  • 8 ounces sharp white cheddar cheese (about 2 cups shredded)
  • 4 ounces sharp cheddar cheese (about 1 cup shredded)
  • ½ cup warmed milk

Instructions

  1. Combine pasta, water, salt, pepper, paprika, and garlic powder in the Instant Pot. Stir well to mix evenly.
  2. Close the lid and set the steam release valve to sealing. Cook on Manual/Pressure Cook at high pressure for 3-4 minutes (3 for whole wheat pasta; 4 for white).
  3. While cooking, shred cheeses and warm the milk separately.
  4. When done, perform a quick release by carefully moving the steam release valve to venting.
  5. Open the lid and add butter first, then gradually stir in cheeses until melted. Add warmed milk and adjust seasoning as needed.
  6. If too liquidy, leave on warm setting for a few minutes to thicken.
