  • 25.4 oz bags Knorr Creamy Chicken Flavored Rice or Herb & Butter Rice
  • 2 cups cooked chicken (diced or shredded)
  • 3.5 cups chicken stock
  • 2/3 cup white grape juice
  • 2/3 cup grated parmesan cheese (plus more for topping)
  • 5 garlic cloves (minced)
  • 4 tablespoons melted salted butter
  • 1.5 cups Monterey Jack cheese
  • Red pepper flakes, salt, and pepper to taste

Instructions

  1. Preheat your oven to 375°F.
  2. Grease a 9×13 casserole dish with cooking spray or butter.
  3. In the dish, combine the rice bags, diced chicken, chicken stock, white grape juice, parmesan cheese (reserve some for topping), minced garlic, melted butter, red pepper flakes, salt, and pepper. Mix well.
  4. Bake uncovered for 30-40 minutes until most liquid is absorbed.
  5. Let rest for about 10 minutes before serving. Top with extra parmesan if desired.
