  • 1 pound ground chicken
  • 1 large egg (beaten)
  • ½ cup grated parmesan cheese
  • 2 tablespoons chopped parsley
  • 2 teaspoons kosher salt
  • ½ teaspoon black pepper
  • ½ cup whole milk
  • ½ cup fine dry breadcrumbs
  • ¼ cup finely diced yellow onion
  • 2 large yellow onions (thinly sliced)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Gruyere cheese
  • Beef broth

Instructions

  1. In a mixing bowl, combine ground beef, ground chicken, beaten egg, parmesan cheese, parsley, salt, pepper, whole milk, breadcrumbs, garlic, and diced onion. Mix until just combined.
  2. Preheat oven to 400°F (200°C). Shape the mixture into one-inch meatballs and place them on a lined baking sheet.
  3. In a skillet over medium heat, melt butter with vegetable oil. Add sliced onions and cook until caramelized (15–20 minutes). Sprinkle flour over onions and stir.
  4. Gradually add beef broth while stirring until smooth. Season with salt and pepper; simmer for five minutes.
  5. Reduce oven temperature to 350°F (175°C). In a baking dish, layer baked meatballs and pour the onion mixture over them. Top with mozzarella and Gruyere cheeses.
  6. Bake until the cheese is bubbly and golden brown (15–20 minutes). Garnish with parsley before serving warm.
