  • 1 cup (2 recipes) cowboy butter (softened)
  • 1 cup heavy whipping cream
  • 2 teaspoons kosher salt
  • ½ teaspoon black pepper

Instructions

  1. Boil the Potatoes: In a large pot of salted water, add the quartered potatoes and cover until boiling over high heat.
  2. Cook Until Tender: Once boiling, uncover and reduce heat to medium-high. Cook until fork-tender (approximately 25 minutes).
  3. Drain and Mash: Drain the potatoes and return to the pot. Lightly mash with a potato masher or fork to your desired consistency.
  4. Add Cowboy Butter and Cream: Stir in most of the cowboy butter (reserve ¼ cup) and add the heavy cream; mash until fully combined.
  5. Season and Serve: Mix in kosher salt and black pepper. Serve warm with reserved cowboy butter on top.
