  • 2 lb chicken tenderloins
  • 1/2 cup flour
  • 1 tbsp all-purpose seasoning (Cajun or similar)
  • 2 eggs
  • 1/4 cup milk
  • 3 cups cornflakes (crushed)
  • 1 stick butter
  • 4 cloves garlic (minced)
  • Zest and juice of 1/2 lemon

Instructions

  1. Crush cornflakes in a ziplock bag using a rolling pin.
  2. Set up three shallow dishes: one for the flour and seasonings, one for whisked eggs and milk, and one for the crushed cornflakes.
  3. Coat each chicken tender first in the flour mixture, then dip into the egg wash, and finally press into the cornflake crumbs until well coated.
  4. Preheat your air fryer to 400°F. Cook tenders in batches for about 10 minutes total, flipping halfway through.
  5. While cooking, mix together melted butter, garlic, lemon zest and juice to create the sauce.
  6. Toss cooked chicken tenders in the cowboy butter sauce before serving.
