  • ¾ cup chopped red onion

  • 1 cup shredded cooked chicken

  • ¼ teaspoon dried oregano
  • ¼ teaspoon fine sea salt or kosher salt
  • 4 8-inch flour tortillas (white or whole wheat)
  • ¾ cup shredded sharp cheddar cheese
  • ¾ cup shredded Monterey jack or pepper jack cheese

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the chopped bell pepper, red onion, and corn. Cook while stirring often until softened (about 6-8 minutes). Remove from heat.
