  • 1 ¼ cup full-fat milk
  • 2 tablespoons clear runny honey
  • ½ cup sugar
  • 2 tablespoons cornstarch
  • 3 large apples, peeled, cored, and diced
  • 3 tablespoons water
  • 3 tablespoons sugar (for cooking apples)
  • ¼ cup raisins
  • ¾ teaspoon ground cinnamon
  • ¼ cup lightly toasted pecans or walnuts, chopped

Instructions

  1. Prepare your ice cream maker by freezing the bowl for at least 16 hours.
  2. In a small bowl, mix sugar and cornstarch; set aside.
  3. In a large saucepan, combine milk, heavy cream, and honey. Heat gently until just simmering. Gradually whisk in the sugar-cornstarch mixture until thickened.
  4. Cool the cream mixture at room temperature before refrigerating for at least 6 hours.
  5. In a small saucepan, cook diced apples with sugar, water, cinnamon, and raisins over low heat until softened into a compote; cool before refrigerating.
  6. Once chilled, churn the mixture in your ice cream maker according to the manufacturer’s instructions for about 20 to 30 minutes.
  7. Transfer ice cream to a freezer-safe container and freeze for several hours before serving.
