  • 1 cup chopped celery
  • 3/4 cup shredded carrots
  • 1 red bell pepper, chopped
  • 1 onion, minced
  • 1 ½ tablespoons minced garlic
  • Slivered almonds (for topping)
  • 1 tablespoon peanut butter
  • 1 cup brown sugar (or adjust to taste)
  • 1/4 cup sugar
  • 2 teaspoons hoisin sauce
  • 2 teaspoons oyster sauce
  • 1 teaspoon rice vinegar
  • 2 tablespoons soy sauce
  • Pinch red pepper flakes
  • Lettuce leaves (for serving)

Instructions

  1. In a skillet over medium heat, cook the ground turkey until nearly done, breaking it apart as it cooks.
  2. While the turkey cooks, mix together all sauce ingredients in a separate bowl until well combined.
  3. Once the turkey is almost cooked through, remove it from the pan and set aside. In the same skillet, sauté chopped celery, shredded carrots, red bell pepper, onion, and garlic until tender (about 6 minutes).
  4. Return the cooked turkey to the skillet with the vegetables. Pour in the sauce mixture and stir everything together. Cook for an additional 3 minutes until heated through.
  5. Serve the turkey mixture inside lettuce leaves and top with slivered almonds if desired.
