  • 8 Corn Tortillas
  • 15 Ounces Red Enchilada Sauce
  • 1/2 Onion (chopped)
  • 1 Red Bell Pepper (chopped)
  • 1 Tablespoon Garlic (minced)
  • 1.5 Pounds Ground Beef
  • 2 Packets Taco Seasoning
  • 3/4 Cup Water
  • 14.5 Ounce Fire Roasted Tomatoes (canned, drained)
  • 28 Ounce Refried Beans
  • 2 1/2 Cups Colby Jack Cheese (shredded)
  • 2 Cups Monterey Jack Cheese (shredded)

Instructions

  1. Preheat the oven to 350°F and grease a 9×13-inch baking dish.
  2. Dip each tortilla in red enchilada sauce and arrange four in the bottom of the baking dish.
  3. In a large skillet over medium heat, add oil and sauté chopped onions and bell pepper until softened. Stir in minced garlic for about 30 seconds.
  4. Push aside the vegetables and add ground beef, cooking until browned and crumbled.
  5. Drain excess grease, then mix in taco seasoning, water, enchilada sauce, and drained tomatoes. Cook until thickened.
  6. Spread half of the refried beans over tortillas followed by half of the meat mixture. Sprinkle half of the combined cheeses on top.
  7. Repeat layering with remaining ingredients: tortillas, beans, meat mixture, ending with cheese on top.
  8. Bake for about 30 minutes until bubbly and golden brown.
