Ingredients

Scale
  • 4 slices sourdough bread
  • 4 slices Oaxaca cheese
  • 4 slices Cheddar cheese
  • 1/2 cup Chihuahua cheese (shredded)
  • 2 tablespoons Cotija cheese
  • 6 tablespoons unsalted butter (softened)
  • 2 tablespoons mayonnaise
  • Fresh cilantro (chopped)
  • Roasted jalapeño (minced)

Instructions

  1. In a mixing bowl, combine softened butter, mayonnaise, Cotija cheese, cheddar cheese, chopped cilantro, and chili flakes to create the flavored butter spread.
  2. Spread the butter mixture on one side of each slice of sourdough. Layer Oaxaca cheese, Cheddar cheese, Chihuahua cheese, and Cotija cheese on the unbuttered side of two slices. Top with the remaining slices, buttered side facing out.
  3. Heat a skillet over medium heat. Cook one sandwich until golden brown (3-5 minutes), then flip and cook until both sides are crispy and the cheese is melted.
  4. For the sauce, mix mayonnaise with garlic powder, onion powder, minced roasted jalapeño, and red bell pepper until combined.
  5. Cut the sandwiches in half and serve warm with the sauce on the side for dipping.
