Creamy Sun Dried Tomato Gnocchi is a comforting and satisfying dish that combines the delightful textures of soft gnocchi with a rich, creamy sauce. This quick-to-make recipe features sun dried tomatoes, fresh spinach, and a touch of garlic, creating a harmonious blend of flavors that will impress your family and friends.

  • 3 tablespoons olive oil (from sun dried tomatoes)
  • 1 leek (cleaned and sliced)
  • 4 cloves garlic (minced)
  • 1 pint cherry tomatoes
  • 1/2 cup sun dried tomatoes (chopped)
  • 2/3 cup white grape juice or chicken broth
  • 3 tablespoons butter
  • 17 oz. refrigerated gnocchi
  • 1/3 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach (chopped)
  • 1/3 cup heavy cream or half-and-half
  • 1/4 cup fresh basil (chopped)
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, add the olive oil from the sun dried tomatoes. Once hot, add the leeks and cook until tender, about 3 minutes.
  2. Add the garlic and cherry tomatoes to the skillet. Cook until the tomatoes begin to burst, stirring occasionally. Gently push them with a spoon to release their juices. Stir in the sun dried tomatoes and season with salt; cook for another 2 minutes.
  3. Pour in the white grape juice or chicken broth, bring it to a simmer, and allow it to reduce by one-third for about 1-2 minutes. Stir in the butter until melted.
  4. Combine in the cooked gnocchi and let everything cook together for an additional 3-5 minutes. Add Parmesan cheese, spinach, heavy cream, and basil. Heat until the spinach wilts nicely.
  5. Serve hot with additional salt and pepper as desired.
