  • 1 Rotisserie Chicken
  • 1 Tablespoon Chili Powder
  • 2 teaspoons Smoked Paprika
  • 2 teaspoons Cumin
  • 2 Cups Shredded Mexican Cheese
  • 12 Corn Tortillas
  • Vegetable Oil
  • 1 Can Red Enchilada Sauce (10oz)
  • 1 Cup Cola (or Root Beer broth)
  • 2/3 Cups Light Brown Sugar
  • 1/2 teaspoon Garlic Powder

Instructions

  1. Shred the rotisserie chicken and toss it with chili powder, smoked paprika, cumin, and garlic powder until well coated.
  2. Heat vegetable oil in a cast iron pan over medium heat. Add seasoned chicken to brown slightly before mixing with enchilada sauce and Cola in a pot.
  3. In the same pan, add more oil and a spoonful of sauce. Cook corn tortillas until soft; fill with chicken mixture and cheese before folding.
  4. Cook each taco until browned and crispy on both sides.
