  • 2 tablespoons oil
  • 2 1/4 cups cheese (Monterey Jack)
  • 12 tortillas (corn or flour)
  • 2 cans (15 oz each) enchilada sauce (red)
  • 1 teaspoon cumin (ground)
  • 1 teaspoon coriander (ground)
  • 1/4 teaspoon smoked paprika
  • 1/8 teaspoon cayenne
  • 1/2 teaspoon salt
  • 2 1/2 teaspoons cocoa powder
  • 1 tablespoon brown sugar (optional)

Instructions

  1. In a saucepan over medium heat, combine enchilada sauce and cocoa powder; simmer and set aside.
  2. Preheat oven to 400°F.
  3. In a nonstick skillet, heat oil and cook ground beef with spices until fully browned.
  4. Remove from heat; stir in cheese and cilantro, then combine with some prepared sauce.
  5. Spread sauce in a baking pan. Dip tortillas into the remaining sauce; fill with beef mixture and roll tightly.
  6. Place rolled enchiladas seam-side down in the baking pan. Top with remaining sauce and cheese.
  7. Bake for about 20 minutes until bubbly and golden brown.
