  • 2 cans black beans (14 oz each), drained and rinsed
  • 1 tablespoon olive oil
  • 1/4 green bell pepper, minced
  • 1/4 red bell pepper, minced
  • 3/4 cup yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 3/4 teaspoons ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 cup Panko bread crumbs
  • 2 large eggs, whisked
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F. Spread black beans on a lined baking sheet and bake for about 15 minutes until slightly dried out.
  2. In a skillet over medium heat, sauté green and red bell peppers, onion, and garlic in olive oil until softened (about 5-6 minutes). Transfer to a paper towel-lined plate to cool.
  3. In a large mixing bowl or food processor, combine all remaining ingredients except black beans until well mixed; fold in baked black beans lightly.
  4. Form the mixture into patties using about 1/3 to 1/2 cup portions. Chill in the fridge for at least 15 minutes.
  5. Bake patties on a parchment-lined baking sheet at 375°F for approximately 20 minutes (10 minutes on each side) until firm and golden brown.
