  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon red pepper flakes
  • Salt to taste
  • 1 cup orzo pasta
  • 2 cups vegetable broth (or chicken broth)
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, bring 2 cups of vegetable broth to a boil. Add 1 cup of orzo pasta and cook for about 8-10 minutes until al dente. Drain using a colander and set aside.
  2. In a skillet over medium heat, add 3 tablespoons of olive oil. Once hot, add 4 minced garlic cloves and sauté until fragrant (about 30 seconds).
  3. Add the shrimp to the skillet along with 1 teaspoon of red pepper flakes and salt to taste. Cook until the shrimp turn pink and opaque (about 3-4 minutes).
  4. Combine the cooked orzo with the shrimp in the skillet. Stir gently to combine everything together, then season with 1/2 teaspoon of black pepper.
  5. Remove from heat and stir in 1 tablespoon of chopped fresh parsley and 1 tablespoon of lemon juice before serving.
