  • 8 ounces spaghetti
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook the spaghetti in boiling water for about 8-10 minutes until al dente. Drain and set aside.
  2. In the same pot, heat olive oil over medium heat. Sauté the chopped onion for about 3-4 minutes until translucent.
  3. Add minced garlic, diced bell pepper, and zucchini to the pot; cook for another 5 minutes until tender.
  4. In a mixing bowl, combine drained spaghetti with sautéed vegetables. Mix in dried oregano, salt, black pepper, marinara sauce, and mozzarella cheese.
  5. Preheat your oven to 375°F (190°C) and grease a 9-inch pie dish. Pour the spaghetti mixture into the dish and press down gently.
  6. In a separate bowl, whisk together eggs with grated Parmesan cheese and pour it over the spaghetti mix.
  7. Bake in the preheated oven for about 25-30 minutes until golden brown on top.
